A different take on a classic salad!
1 cup cubed butternut squash, steamed and cooled
1 pear chopped
1 rib celery thinly sliced
1/4 cup pecans chopped
1/4 cup pomegranate arils
2 tablespoons fresh parsley, chopped
2 tablespoons plain unsweetened vegan yogurt or plain unsweetened Greek yogurt
1 tablespoon lemon juice
1/4 teaspoon salt
to taste pepper
1 head red or green butter lettuce, leaves removed and kept intact
Add all ingredients except for lettuce to a medium sized bowl and toss together until mixture is evenly coated with yogurt. Spoon mixture evenly among butter lettuce leaves and serve immediately.
