This easy dish can be eaten as a delicious sandwich with any protein of your choice, or over your favorite pasta!
1 lb Broccoli Rabe
1 Medium Sweet Onion (sliced)
3 Roma Tomatoes (quartered)
8 oz Mini Mixed Peppers or Baby Bella Mushrooms
3-4 Garlic Cloves (minced)
2 Tbsp Olive Oil
Sea Salt to taste
Fresh Basil * optional
Bring a large pot of salted water to boil. Prepare broccoli rabe by trimming ends.
Add broccoli rabe to boiling water and cook for 2 to 3 minutes. Immediately remove from boiling water and place in an ice bath (or run under very cold water). Pat dry the broccoli rabe after it is completely cooled.
In a large skillet, heat oil over medium heat. Cook onions and garlic until onions are caramelized, stirring occasionally.
Once onions are done, remove them and set aside. In the same skillet, add roma tomatoes and peppers and cook in the garlic oil for about 3 minutes over medium high heat.
Add broccoli rabe and the carmelized onions, cook for another 2 minutes, while tossing the ingredients so that they are well mixed, add more oil if desired.
