Ingredients

2 or 3 medium cooked beets (steamed or roasted)

14oz can of black beans (drained & rinsed)

1 ½ cups cooked brown rice

1 cup flour (can sub GF flour)

1 Red onion

1 hot house tomato

2 tbsp oil

1 tbsp soy sauce or Tamari

2 tsp garlic powder

2 tsp onion powder

2 tsp Chili powder

2 tsp smoked paprika

2 tsp maple syrup (or any sweetener of choice)

Salt & pepper to taste

Any bun of your choice

Directions

Add the cooked beets, black beans, brown rice into a food processor and pulse til all combined.

Once combined go ahead and add in the spices along with the flour and mix again. At this point the mixture should be a dough like consistency . Form it into patties.

If you notice the mixture is too wet, you may add more flour. If the mixture is too dry you can always add a bit of water or some more beets should do the trick.

Once the patties are formed, place them on a baking tray and put into the refrigerator to set for about 30 minutes to 1 hour.

When ready to cook, add oil to a pan, medium high heat, cook on each side for about 2 minutes or until it’s starting to brown nicely then bake for an additional 25 minutes on 325 .

To assemble the burger, add a couple slices of red onion, a slice of hot house tomato and whatever condiments you like. Enjoy!

You can also freeze the extra patties and have a delicious veggie burger anytime you want.
